Biltong, a traditional South African snack, is crafted through a meticulous process that enhances its natural flavours and preserves its nutritional value. At Aitch's Biltong in Hong Kong, we follow a time-honoured method to ensure our biltong meets the highest standards. Here’s how we make it:

1. Cutting

The journey to perfect biltong begins with selecting the right cut of meat. We use high-quality beef, including Australian Wagyu for our Premium Black Line and 100% grass-fed Brazilian beef for our Extra Lean and Fitness lines. The meat is cut into thick slabs, to help retain moisture during the drying process.

2. Preparation

Once the meat is cut, it undergoes a quick dip in vinegar. This step not only enhances the flavour but also helps in preserving the meat. After the vinegar dip, the meat is seasoned with a minimal yet flavourful blend of spices imported directly from South Africa, allowing the natural taste of the beef to shine through. We pride ourselves on using all-natural ingredients and natural preservatives to maintain the authenticity and quality of our biltong.

3. Drying

The seasoned meat slabs are then hung to dry in a controlled environment. The duration of drying depends on how moist or dry we want the final product to be. This slow drying process is crucial for developing the tender texture and rich flavour that biltong is known for.

4. Slicing

After the drying process is complete, the biltong is carefully checked for quality. It is then sliced into perfect ready-to-eat pieces, though you can also purchase it as whole slabs. This slicing ensures that the biltong is easy to enjoy as a snack right out of the package.

5. Packaging

To ensure freshness, we use vacuum-sealed bags with oxygen absorbers for our biltong slabs. Oxygen absorbers are also used in our sliced biltong bags. This packaging method helps maintain the biltong’s quality and extends its shelf life.
