Ingredients (Serves 2)

  • 30g Extra Lean Biltong, cut into small pieces
  • 1 cup cooked white rice
  • 1 egg
  • Vegetables: 1/2 carrot (diced), 1/2 cup frozen peas and corn
  • 1 tablespoon curry powder
  • 2-3 tablespoons chopped fresh spring onions
  • 1-2 tablespoons soy sauce
  • 1 tablespoon vegetable oil

Instructions

  1. Heat the vegetable oil in a large frying pan or wok over medium-high heat.
  2. Add the chopped Extra Lean Biltong, egg, and cooked rice to the pan. Stir-fry everything together until the egg is cooked through.
  3. Toss in the diced carrot, frozen peas and corn. Sprinkle in the curry powder and continue stir-frying for 2-3 minutes until the veggies are tender.
  4. Remove from heat and stir in the chopped spring onions and soy sauce. Give it all a good mix to combine the flavours.
