At Aitch's Biltong, we're all about celebrating the rich flavours of South Africa while adding our own unique touch to classic dishes. So, let's dive right into this delicious recipe!

Ingredients (Serves 2)

- 2 pounds uncooked pasta (cavatappi)
- 6 cups water
- 4 cups milk
- 2 teaspoons Dijon mustard
- 2 teaspoons fine sea salt
- 2 teaspoons garlic powder
- 4 to 8 cups (8 to 16 OZ) freshly-grated sharp cheddar cheese
- 2 cups (1 OZ) finely-grated Parmesan cheese
- Freshly-ground black pepper, to taste

Instructions

1. Cook the Pasta

In a large stockpot, combine the pasta, water, milk, Dijon mustard, sea salt, and garlic powder. Heat over medium-high heat, stirring occasionally until the mixture reaches a boil. Keep an eye on it to ensure the pasta cooks to *just* barely al dente. We want it nice and tender but still with a bit of a bite.

2. Remove Excess Water (if needed)

Depending on how much starchy pasta water remains, you may need to remove the excess water. Simply dip a heatproof measuring cup in and set aside. We'll use this later to adjust the consistency of our sauce. If, by any chance, there is no starchy pasta water remaining, add 1/2 cup of hot water into the pot.

3. Add Cheese

Once the pasta is cooked, it's time to add the star of the show – the cheese! Sprinkle in your freshly-grated sharp cheddar and finely-grated Parmesan, stirring gently until everything is melted. If the mixture seems a tad dry, don't hesitate to add back some of that reserved starchy pasta water for extra creaminess.

4. Season to Perfection - Add Your Biltong
